Carnitas Breakdown

I made carnitas again tonight with much better results. A basic dry rub recipe consists of:

  • paprika
  • garlic powder
  • brown sugar
  • cumin
  • salt

But, I found that using Lowry’s seasoning salt (which has all of that except brown sugar) worked just as well. Perfect amount of saltiness!

Brown all sides in a hot pan, and then throw it into 275 degree oven for at least 3 hours for maximum effect. I put mine in for just 1.5 hours because I was getting really hungry, but it came out all still all good!

Skin came off in one piece. Crispy goodness.
