Lunch with Gusto
ahi tuna
avocado
gruyere
arugula
herbes de provence, garlic, lemon, salt, pepper
1. Coat tuna with olive oil, roll around in herbes de provence, salt, pepper
2. Sear tuna on high heat for about 1-2 minutes each side, leaving middle rare, and set aside
3. Heat up pan with olive oil, throw in 1-2 cloves of minced garlic
4. Throw in 2 handfuls of arugula, salt, pepper, and sautee for 2-3 minutes or until arugula is beginning to wilt
5. Open up an avocado, section the avocado into cubes, and spoon out
6. Layer in a bowl arugula, tuna, avocado, then shave some cheese on top
7. Squeeze some lemon juice over it all
