Summer weather in the fall can screw with your flavors. I feel like I’m supposed to be cooking all this fall-weathery-rustic shit because it’s September, but the weather tells me I’m still in summer mode, and I want to cook something light. BAH.
Here’s a product of being split between the two. It’s a herb-rubbed chicken that’s been pan-seared over a bed of whole wheat fettucine tossed with basil pesto. I tossed some spinach and cherry tomatoes with a home-made dressing on top of it for good measure because it was missing something light for the recent hot weather.
